I have just discovered molecular gastronomy.
It's the art of eating good food. In other words, it's chemistry in cooking. At schools, the students should have practiced making their own recipes under competition conditions, supervised by their molecular tutor. And it's great to know that chefs ho practice molecular gastronomy take advantage of this to create new emulsified sauces.
